Ready, Steady, Kofta

Yohan's inspired Kofta's

this recipe makes 20 skewers

Which ingredients do we need:


  • 1kg of ground lamb meat

  •  1 tablespoon of smoked salt

  • 1 tablespoon of lavas

  •  1 tablespoon of celery leaves

  •  1 middle sized white onion, clean, cut in big chunks.

  • 5 cloves of garlic, clean

  • ½ teaspoon of cumin powder

  • ½ teaspoon of cinnamon powder

  • ½ teaspoon of all spice powder

  •  ½ teaspoon of cayenne pepper powder

  • ½ teaspoon of ginger powder

  • ½ teaspoon of lemongrass powder

  • A splash of oil

  • 1 medium sized egg

  • 3 cups of breadcrumbs



Which kitchen supplies do we need:


  • Big bowl

  • Wooden or bamboo skewers, medium sized

  • Bowl, which will fit the skewers

  • Food processor

  • BBQ or grill

  • Dry towel

  • Clean tray


How to make the Kofta's:


Read the recipe first and make sure you understand what you need to do.

  1. Set up all the ingredients in front of you.

  2. Put the ground lamb meat in a big bowl.

  3. Put the wooden or bamboo skewers in the other bowl. Add lukewarm water to the skewers until fully covered with water. We do this so the skewers do not burn during grilling or BBQing.

  4. Now put all the ingredients into the food processor, except for the ground lamb meat and breadcrumbs. Blend these ingredients in the food processor until it is a fine mixture.

  5. Add the spice mixture to the ground lamb meat and mix this all thoroughly together.

  6. When this is done, add all the breadcrumbs to the lamb meat mixture, and mix it all together to one mass.

  7. Roll the lamb meat mixture into 50 gram balls each.

  8. Take the skewers out of the water and dry them with a dry towel.

  9. Put each lamb meat ball onto a skewer and roll & press the meat ball into an oval shape and put them on a tray. Make sure the meat sticks tight to the skewers, if the meat is too loose on the skewer the meat will fall off the skewer when grilling or BBQing. Repeat this process until all the meat is finished.

  10. Cover the meat skewers with foil and put them in the refrigerator for at least an hour. You can also make these meat skewers a day in advance.

  11. When you are ready to finish the Kofta's, heat up the grill or BBQ to a nice medium heat.

  12. Take the meat skewers out of the refrigerator while the grill or BBQ is heating up. We do this to get the coolness from the refrigerator so the meat will cook more evenly.

  13. When the grill or BBQ is heated up to the right temperature, start grilling the meat skewers, rotating them every couple of minutes to cook them evenly.

  14. After about 10 to 15 minutes the meat skewers will be fully cooked, you can check this by or cutting into them with a knife or by pressing on top of them. With the pressing technique, you can hold on to the hand trick. Put your thumb on your pinky and press with your index finger of your other hand underneath your thumb (the soft bit). When the meat skewer feels the same as your hand then the meat is fully cooked.

Yohan’s home tip:

I love to eat these Koftas rolled into a wrap or on a flat bread, adding some crispy lettuce, tomato, homemade hot sauce and garlic sauce. But feel free to mix in your own ingredients to this delicious Kofta.
